Doesn’t this look delicious!? Steaming and bubbling away…
Over the weekend I tried a recipe of Lydia’s, most of her things are pure winners. Love this one cause it’s simple and delicious…and it reminds me of Tuscany – my favorite place. Just a few good ingredients is all it takes. It’s a wonderful side dish with just about anything, however, it is spectacular with a great piece of meat of some sort. I had it with loin lamb chops…yummy. I didn’t follow her recipe exactly (for example I used canned beans instead of soaking them overnight). Below is my version.
Here we go…
6 big cloves of garlic – sliced
1 can whole peeled tomatoes (break up with your hands)
1 tablespoon tomato paste
1 can cannellini beans – drained and rinsed
1 big bunch swiss chard – roughly sliced
pereroncino (to your taste)
In a large pot of boiling water cook swiss chard for about 5-7 minutes until just tender. Drain.
In a large skillet, saute tons of sliced garlic in olive oil with some peperoncino (of course). After about 1 minute add tomato paste and mix with garlic for about a minute. Add cannellini beans. Stir. Add tomatoes and swiss chard, mix well. Simmer for about 20 minutes. Healthy and delicious!
